In early 2014, the HCSV Foundation Board of Trustees voted unanimously to pursue the development of a small brewery on the Village grounds with the name Cold Spring Brewery. To this end, and in keeping with the mission of the Historic Cold Spring Village, an 1804 three bay English-style Cape May County barn from Upper Township was purchased. Stillwell and Elizabeth Corson, a familiar name in the County, built the classic building. Permission to restore and reconstruct the barn, board by board, and place it on Village property was received from both the Lower Township and County of Cape May Zoning Boards along with approvals to utilize the barn in connection with the proposed brewery. Although the barn/brewery is located outside the Village fencing, it remains part and parcel of the 30 acres that are located between Seashore Road and Route 9 in Cold Spring, containing 27 restored historic structures.

Funding for the project was secured through HCSV Foundation’s fundraising events, donations, memberships, retail sales, corporate sponsorship for programs and gate revenue. Its purpose is to stabilize the museum for future generations to enjoy. The Village’s mission is historic preservation, history education, and heritage tourism.

Cape May Farmhouse- Reminiscent of a period appropriate beer using single malt and single hop. Sweet and fruity, with very low hop bitterness. 5.1%ABV

Hildreth German Wheat- Cloudy and straw colored with a soft white head, fragrant and complex bouquet of bananas, cloves, and citrus. Bubbly mouth feel. Very refreshing.  5.4%ABV

Cold Spring Red- Rich burnt sienna in color with a creamy beige head leaving good lace. Lightly roasted malt flavor up front with a clean finish. 5.6%ABV

Dennisville Inn Porter- Dark hazy brown with a creamy tan head. Rich deep-roasted malt aroma with a hint of chocolate and coffee.  3.9%ABV

Ishmael Pale Ale- Hazy gold and fresh hoppy nose, sweet malty entry: malty grapefruit finish. 7.6%ABV

Vanilla Milk Stout- Dark hazy brown in color.  Starts with a slight chocolate smell and taste, followed by hints of vanilla. Extra smooth due to the presence of vanilla mixed in with lactose. 4.3%ABV

Finley Forge IPA (no growler fills) – Cold Spring Brewery’s first IPA. It combines the best of four worlds having a strong bitter presence, while also being a tad sweet, high in ABV and very smooth. It is best classified as a New England IPA. 9.1%ABV
